In the northeast of Hungary, located the production area of the famous Tokaji. Tokaji Aszu may be the world’s first official grading system for wine, that is 100 years earlier than the Bordeaux grading system. The historically recorded grading system appeared in 1772. For the first time, the Rakoczi family classified vineyards into the First Growth, the Second Growth, and the Third Growth. Vineyards are distinguished according to the topography, climate and historical quality of the land. This grading system is still in use today and is accepted by the majority of vignerons and drinkers.

The Tokaj wine region itself is a volcanic area formed about 15 million years ago, which gives special characteristics to the aszu wines. Although Tokaji Aszú is a sweet wine, this is not what makes it special. The truly diverse soils of the wine region offer unique opportunities for the vines, and that is what makes this wine stand out, even as an accompaniment to food. The trinity of the acidity forming the backbone of the Tokaji aszu wine, the alcohol and the sweetness are all in perfect balance. Tokaj sweet wines, especially Aszú, are therefore vibrant, lively and characterised by fruity and floral notes. When drinking Aszú, you can tell you have a sweet wine in your glass, but good Aszú is never recognisable by its sugar content, rather it is the incredibly complex, rich, unique structure of the terroir, even by global standards, that provides the backdrop for Aszú’s almost incomprehensible complexity.

The local soil is mainly clay, loess and volcanic bedrock. The main grape varieties are Furmint, Harslevelu and Sarga Muskotaly. The slopes of Tokaji vineyards allow the vines to enjoy the warm summer sunshine, and dry autumn climate. Morning mist from the Bodrog and Tisza rivers can bring “Noble rot” to the vineyards. When the fungus infects grapes, it absorbs water from the fruit and ends up with shriveled grapes known locally as “Aszu Berries”.
During the harvest, the grapes collected are divided into three categories, that are used to make different wines.
Grapes that are not affected by the Nobel rot fungus are picked individually and made into wine with high acidity which is often used as the base of Tokaji Aszu.
This kind of wine may be slightly sweet or sweet, depending on how much of the grapes used at winemaking are botrytized.
“Aszu Berries” are soaked in dry wine for 36 hours, fermented, and then aged for at least 3 years in a new 136-liter Hungary small oak barrel to produce Aszu.

A Unesco World Heritage Site, Tokaj has long been known for its golden-hued wines made naturally sweet by the work of a benign fungus. It was Louis XIV, the King of France, who famously said that Tokaj was “the wine of kings, the king of wines.” Today, both sweet and dry wines are made here.

The Tokaj Wine Region is home to some of Hungary's most beloved varieties of wine. The region is spread over a romantic landscape of cellar labyrinths, vines and slopes, nestled at the foothills of the Zemplén Mountains. Its winemaking history dates back over a thousand years. There's historic wine, and then there's Tokaj. Made for more than one thousand years, Hungarian Tokaj was served at Versailles and became a favourite of Louis XV, King of France. The reason for its longterm success as one of the world's most beloved libations? This region has a unique microclimate that allows the wine to develop a distinctive taste. As a matter of fact, the world's first vineyard classification system was established here in 1730 by royal decree, followed by the 1757 designation of Tokaj as the world's first appellation.
Over the centuries, different ethnic groups settled in the area, bringing influences from places like Swabia, Poland, Romania, and Armenia. They were drawn partly by the unique environment that lent itself to wine production. In the shadow of an extinct volcano, Mount Tokaj, the producers cut their cellars out of slabs of volcanic rock about 500 years ago. The stone creates the ideal setting for the aging of this wine variety.

The Tokaj Wine Region—one of Europe's oldest—is a swirl of diverse history, a wide range of architectural styles, a labyrinth of wine cellars, and a breathtaking flow of vineyards, farms, villages, and waterways. Consisting of 27 villages, the area is a cultural corridor situated in north-east Hungary, where generations and a mix of ethnicities and religions have contributed to a rich heritage.
The Tokaj Wine Region is legendary because one of the world’s best natural sweet wines, Tokaji Aszú, is made here. The region is most famous for its 3,000 wine cellars. Some of the structures are used for winemaking, some for aging wine, while others are used as social centers in the small towns and villages. You can find these ancient objects standing alone, or as part of a winery. They can be in the centre of the town under an old townhouse, or on the outskirts of town close to the vineyards. The charming Swabian village of Hercegkút, for instance, has a cellar system situated on four different levels and is more than three kilometres long.
The Tokaj Wine Region was recognised by UNESCO for its importance to the common cultural heritage of humanity. It was listed as a protected cultural landscape by the World Heritage Committee in 2002. Its aroma mixes a pleasant honey character thanks to the notes of propolis and wax. As you move, apricots, peaches, and jam return from the glass. Botritis is softly present. In its taste, a nice pleasant sweet feeling can be observed, which is mixed with the taste of compotes and southern fruits. The perfect balance is restored by the acids, alcohol only plays an accompanying role. Our Tokajicum 6 puttonyos aszú is a special experience when consumed on its own.
